Commercial Ice Machine Not Making Ice?

A North Mississippi Tech Shares What to Check First

I’m Dan with S.I. Service Group here in North Mississippi. I work on commercial ice machines in restaurants, bars, convenience stores, and churches around Tupelo every single week. If your ice machine’s not making ice, let me walk you through what I actually check in the field before we start throwing parts at it.

Is the Machine Getting Power, Water, and Air?

Sounds basic, but nine times out of ten I start with the simple stuff. Make sure the ice machine is actually turned on, breaker isn’t tripped, and nobody unplugged it to use a mixer or floor machine. I’ve seen that more than I care to admit in Tupelo and Pontotoc kitchens.

Next, check that the water shutoff valve is open and the bin control isn’t blocked. If the bin is overfull or the sensor is stuck, the unit thinks the bin is full and won’t make ice. Make sure nothing is piled up against the sides or hanging over the bin sensor on those Hoshizaki and Manitowoc units.

Is the Condenser Coil Dirty?

This one is huge in North Mississippi. Our heat and humidity are brutal, and they cook condenser coils. I see this on Hoshizaki, Manitowoc, Scotsman, and Ice-O-Matic machines all over Tupelo, Corinth, and New Albany. When that coil is packed with grease, dust, and cottonwood, the machine can’t get rid of heat, and ice production tanks or stops altogether.

Pull the front or side panel and look at the coil that looks like a little radiator. If it’s dark, furry, or caked with kitchen grease, that’s a problem. You can gently vacuum the surface or blow it out with compressed air if you know what you’re doing. Don’t bend the fins, and don’t soak an air-cooled coil with a pressure washer. Once that coil is cleaned properly, a lot of “no ice” and “slow ice” calls magically clear up.

Dirty condenser coils are one of the biggest ice-killing problems in North Mississippi kitchens.

Is the Water Filter Clogged or the Water Inlet Valve Failing?

If your ice machine isn’t getting enough water, it can’t build a proper slab or cube. Around Tupelo and Booneville, I see a ton of clogged water filters. Folks forget about them until the machine stops. Look at the filter date. If it’s been over six months, or the filter feels heavy and nasty, change it. Cheap compared to a service call and a lost night of business.

After the filter, I look at the water inlet valve. That’s the little electrically controlled valve that lets water into the machine. If it’s sticking, full of scale, or the screen is plugged, you’ll get weak flow or no flow. You can sometimes see this by watching the fill cycle: weak trickle instead of a good, strong stream. Replacing that valve is usually a tech job, but you can at least spot that something’s off and know it’s not just “the machine is old.”

Is the Water Distributor or Trough Dirty and Slimed Up?

On a lot of Hoshizaki and Scotsman machines, the water distributor at the top of the evaporator gets slimed up with scale and biofilm. Same with the water trough. When those little holes are plugged, water doesn’t flow evenly over the evaporator. You end up with thin ice, hollow cubes, or no harvest at all because the ice never forms right.

If you’re comfortable, you can remove the plastic distributor and look for green, brown, or white buildup. That needs a proper descaling and sanitizing with an ice machine cleaner that’s approved for your brand. Don’t use random chemicals from the mop closet. I’ve seen more damage from the wrong cleaners than from the original problem.

Is the Evaporator Frozen into a Block of Ice?

When I walk up to a “no ice” call, the first thing I pull out is my thermometer, and the second thing I check is the evaporator. That’s the cold plate or grid where the ice forms. On some Manitowoc and Ice-O-Matic units around Corinth and Iuka, I’ll find the entire evaporator frozen solid in a big chunk. The machine can’t harvest, so it shuts down or just keeps struggling.

Causes can be low airflow, bad sensors, water running when it shouldn’t, or refrigerant issues. You can safely turn the machine off, prop the bin door open, and let it thaw. Don’t chip away at the ice with a screwdriver. Once it’s thawed, if it refreezes into a block again, that’s when you need a tech out to figure out why the evaporator is flooding or not cycling right.

Are the Thermostat or Control Board Sending the Wrong Signals?

Modern ice machines aren’t dumb boxes anymore. Your Hoshizaki ice machine, Manitowoc ice machine, or Scotsman probably has a control board watching water level, temperature, and harvest times. When those sensors or the board itself go goofy, you’ll see symptoms like very short cycles, long cycles, or the machine shutting down with error codes and no ice production.

If your display is flashing codes, grab the manual or look up the model online and see what that code means. That’ll tell you if it’s seeing a bad probe, high head pressure, or bin full condition. Control board and thermostat work is where most owners should stop and call for commercial ice maker repair. We use meters, thermometers, and brand-specific procedures to make sure we’re not just guessing and swapping expensive boards.

Low Refrigerant Charge: When It’s Time to Call a Pro

A lot of folks jump straight to “it needs Freon” when the ice machine’s not making ice. Truth is, low refrigerant is not the most common cause. But I do see it in older units around Monroe, Chickasaw, and Calhoun counties, especially where coils haven’t been cleaned and the system’s been running hot for years. Low charge usually shows up as long freeze times, thin ice, and poor harvest even after cleaning and good water flow are confirmed.

Checking refrigerant charge isn’t a DIY thing. We hook up gauges, take temperature readings, and look for leaks. If you suspect a refrigerant issue, that’s a hard stop. Call a licensed North Mississippi refrigeration repair company like us. You need EPA-certified techs, not a jug from the parts store and guesswork.

Quick DIY Checklist Before You Call for Commercial Ice Machine Repair

  • Make sure the power is on, breaker is set, and machine is actually in “ICE” mode.
  • Confirm the water shutoff valve is open and the supply line isn’t kinked or leaking.
  • Check the bin: not overfilled, bin control or sensor not blocked or taped over.
  • Look at the condenser coil and air vents; clean loose dust and clear boxes or crates away.
  • Check the water filter date; if it’s older than six months, replace it.
  • Note any error codes or flashing lights on the display and write them down.

When to Stop Troubleshooting and Call S.I. Service Group

If you’ve gone through that checklist and your ice machine still isn’t making ice, it’s time to bring in a tech. Especially if you’re seeing frozen evaporators, repeated error codes, or you suspect refrigerant or control board issues. The longer that machine struggles, the more damage you can do to compressors and pumps, and the more ice you lose during a busy shift.

At S.I. Service Group, we work on Hoshizaki ice machine repair, Manitowoc ice machine problems, Scotsman, Ice-O-Matic, and most other commercial brands every week. We show up with the right gauges, cleaners, and parts to get you back making ice, not guessing at it.
